Hello guys!
This vegetarian recipe is meant to resemble a chicken salad, but of course without the chicken. The main ingredient is canned chickpeas. The rest of the ingredients are a suggestions, you can always add or use others.
I made a croissant sandwich, but you can serve it on a bed of lettuce or eat it with crackers.
Ingredients:
- canned chickpeas (I used around 500 gr.)
- mayonnaise
- mustard
- boiled eggs
- boiled carrots
- red onion
- yellow bell pepper
- cucumber
- boiled potatoes
- salt and pepper
Mash the chickpeas with a potato masher, or with your hands. It will give the texture you see on the picture. Add the rest of the ingredients and mix. Open and stuff a croissant and serve!
